Manakeesh bi zaatar is a beloved Levantine and Egyptian breakfast flatbread, topped with a fragrant blend of zaatar and olive oil. Made with Zaatar May and Olive Oil May, this recipe delivers deep, herbaceous flavor in under 30 minutes.
Ingredients (Makes 4 flatbreads)
- 2 cups all-purpose flour
- 1 tsp instant yeast
- ½ tsp sugar
- ½ tsp Premium Pink Himalayan Salt
- ¾ cup warm water
- 1 tbsp Olive Oil May (for dough)
Zaatar Topping:
- 4 tbsp Zaatar May
- 4 tbsp Olive Oil May
- Pinch of Premium Pink Himalayan Salt
Instructions
- Mix flour, yeast, sugar, and salt. Add warm water and Olive Oil May, knead for 8 minutes until smooth. Let rest 20 minutes.
- Preheat oven to 220°C.
- Divide dough into 4 balls. Roll each into a thin round on a floured surface.
- Mix Zaatar May with Olive Oil May to form a thick paste. Season with a pinch of Premium Pink Himalayan Salt.
- Spread the zaatar paste evenly over each flatbread.
- Bake for 8–10 minutes until edges are golden.
- Serve hot with fresh tomatoes, olives, and labneh.
